VEGETARISCHES THAI CURRY REZEPT

Are you a curry fan? This Thai curry recipe is a delicious vegetarian alternative that is a must-try! There are some basic rules to know when making a curry for the first time. Indian curry usually uses dried spices like turmeric and masala. Thai curries rely on curry pastes to get the desired flavor. These pastes usually contain lemongrass, ginger, coriander and cumin.

The following dish contains coconut oil and coconut milk. Coconut oil is rich in healthy fatty acids and is perfect for cooking. Coconut milk is a traditional ingredient in Thai curry.

The broccoli strengthens the bones and the mushrooms are good for the immune system. The peppers are rich in vitamin C and the carrots are the optimal source of vitamin A. Vitamin A is essential for eye health.

Thai Curry Recipe

Preparation time: 40 minutes

Ingredients:

  • 200g rice
  • 2½ teaspoons coconut oil
  • 80g broccoli, sliced
  • 1 carrot, thinly sliced
  • 1 spring onion, chopped
  • 1 pepper, remove stem and seeds
  • 100g peas
  • 75g mushrooms
  • 100g red cabbage, chopped
  • Coconut milk
  • 1 teaspoon green curry paste
  • 1½ teaspoons grated ginger

Preparation:

  1. Cooking rice
  2. Add coconut oil and vegetables to a large pan or wok.
  3. Sauté for 8-10 minutes.
  4. Place over medium heat and add coconut milk, curry paste and ginger. Mix well and simmer (covered) for about 30 minutes.
  5. Put the vegetarian curry on a plate with the rice. Top with spring onions and coriander - done!
