Thai Curry Recipe
Ingredients:
- 200g rice
- 2½ teaspoons coconut oil
- 80g broccoli, sliced
- 1 carrot, thinly sliced
- 1 spring onion, chopped
- 1 pepper, remove stem and seeds
- 100g peas
- 75g mushrooms
- 100g red cabbage, chopped
- Coconut milk
- 1 teaspoon green curry paste
- 1½ teaspoons grated ginger
Preparation:
- Cooking rice
- Add coconut oil and vegetables to a large pan or wok.
- Sauté for 8-10 minutes.
- Place over medium heat and add coconut milk, curry paste and ginger. Mix well and simmer (covered) for about 30 minutes.
- Put the vegetarian curry on a plate with the rice. Top with spring onions and coriander - done!
